Spicy Chicken Pasta

Recipe

1 LB ground chicken

2 TBSP butter

1 TBSP olive oil

8 cloves garlic chopped

1 handful parsley chopped

8 roma tomatoes

1/2 TSP ground oregano

1 TSP chili flakes

1/4 TSP cayenne pepper

1 TSP salt

1 LB box penne pasta

1-cup Parmesan cheese (for topping)

 

Directions

In a large pot boil about 4-6 quarts of water for your penne pasta. Bring the water to a boil and the drop in your pasta stirring occasionally to prevent the pasta from sticking. I add a little bit of olive oil to my water but you don't have to. Once the pasta is done boiling drain and rinse in cold water to stop the pasta from cooking. Let the pasta sit while you work on your pasta sauce. In a large pan (I use my cast iron skillet) add in 2 tablespoons of butter and 1 tablespoon of olive oil. Let that heat up and then add in your chopped garlic and chopped parsley let that sauté and then add in the ground chicken and season it with the ground oregano, chili flakes, cayenne, and salt. Once the ground chicken is completely cooked add in 8 sliced roma tomatoes. Let that simmer for about 25-30 minutes to break down all the tomatoes. Once the sauce is done add in half of your boiled penne pasta into the pan of sauce. Stir in the pasta and let the tomato sauce season your pasta. Depending on how saucy you like it you can toss in the rest of the boiled pasta. I usually add the pasta little by little to see how much pasta to sauce ratio works. Once the pasta is done you can top it off it with some grated Parmesan cheese. Enjoy!
