Honey Sriracha Chicken Skewers
Recipe
4-Boneless skinless chicken thighs
1/2 TSP salt
1/2 TSP granulated garlic
1/2 TSP granulated onion
1/2 TSP paprika
1 TBSP olive oil
1/4 cup blue cheese crumbles
chopped parsley
Sauce Recipe
3 TBSP rice vinegar
2 TBSP sriracha
1 TBSP honey
1 TSP dijon mustard
Directions
Start by preparing your honey sriracha sauce in a medium measuring cup rice vinegar, sriracha, honey, and dijon mustard. Whisk together until smooth set aside. Then take your chicken thighs and cut them into small square pieces. You should be able to get 6-8 pieces out of each thigh. Put the chicken in a large mixing bowl season the chicken with paprika, granulated garlic, granulated onion, salt, and olive oil. Then place the chicken on the skewers and grill on high heat until thoroughly cooked and the chicken has some nice grill marks on it. Usually for about 7-8 minutes each side. You can also use a stove top griddle to grill these on as well. While grilling the chicken lightly brush the sauce onto the chicken skewers keeping them sauced and juicy. Plate the skewers and top with blue cheese crumbles and freshly chopped parsley.
